The polishing smooths out the winding and aids in the reduction of string noise.
Note: The technique of polishing takes away the silver plating slightly exposing the copper wire. As a result, the color may vary from silver to brown to gray.

Exp[ensive but lovely

Polished pure silver makes an old guitar sing! These are lovely strings but I did not try the cheaper set yet so I can't really say if they are worth nearly triple the price. Certainly worth trying once.

Savarez cantina polished 510 CRH NT CLASSICAL

Warm tone, good projection, very responsive. The basses definitely feel different due to the "polishing", which does minimize the left hand squeaks when shifting but doesn't eliminate them completely. Also the basses sound slightly damped, which can be cool depending on the effect you're looking for from the basses. Overall I'm very happy and will purchase this set again.
